Today I have met Nancy, a very passionate Thai cook who devotes her time to teach people how to prepare Thai food!



It has been an awesome experience since we were a small group and she brought us to the market where she buys the ingredients, explaining us every detail. Besides, she also brought us to a farm where they grow the vegetables and raise animals. To clarify, this is a communal farm, she doesn’t own it but she contributes.


Again, as in the case of my friend in Ko Lanta who would go across the mountains to get to school like my grandfather, Nancy is doing what my grandmother and every other Galician grandmother used to do (in most of the cases they still do) but with the exception that they are not teaching the world about our food!



I managed to prepare (between parenthesis percentage I managed to eat)

  • Tom Yum creamy soup (100%)
  • Papaya Salad (40%)
  • Pad Thai (100%)
  • Jungle Curry (20%)
  • Mango Sticky Rice (20%)


Just as an observation... while cooking the Jungle Curry, oh mama... I had to cook keeping my body as far from the food as possible, when using the wok I could barely breath because of the spiciness!!!! It was really light for Nancy though 🤣. Amazing experience!
